Mexican Bacon Cheese Smash Burgers
Ingredients
Brioche buns:
- 4 pcs. Brioche Burger Bun
Guacamole:
- 2 pcs. Avocado ripe
- 0.5 pcs. Red Onion
- 1 clove Garlic
- 2 tablespoon Lime Juice
- 1 handful Cilantro fresh
- 1 tsp. Cumin
- pinch Cayenne Pepper
- 2 tablespoon Sour Cream
- Black pepper to taste
Pineapple Salsa:
- 1 pcs. Pineapple stem removed and diced
- 1 pcs. Chili red, deseeded and chopped
- 2 tablespoon Lime Juice
- 1 handful Cilantro fresh and chopped
- Salt to taste
Bacon:
- 8 slices Bacon
Smash burgers:
- 900 gram Ground beef 18% fat or more
- Salt
- 8 slices Cheddar Cheese

Instructions
Guacamole
- Halve the avocados and remove the stone.
- Peel and finely chop the red onion.
- Crush the garlic or chop it finely.
- Add the avocado, red onion, garlic, lime juice, cilantro, cumin, cayenne pepper, sour cream, and black pepper to a bowl.
- Blend with a hand blender until the guacamole is smooth.
Pineapple salsa
- Remove the stalk from the pineapple and dice it.
- Finely chop the red chili and remove the seeds.
- Finely chop the cilantro.
- Add pineapple cubes, chili, lime juice, cilantro, and salt to a mortar.
- Mash the ingredients together into a salsa.
Bacon
- Heat a pan over medium heat.
- Fry the bacon until it is crispy and golden.
- Place the bacon on paper towels to drain excess fat.
Smash burgers
