Delightful summery ice cream dessert made of meringue with ice cream, cream, and strawberries.

It seems that light, airy, and sweet meringues have made a comeback in the dessert repertoire! The crispy meringues are a delicious accompaniment to both fruit and various ice cream desserts, and they are perfect for rounding off the many summer barbecue evenings – or a lovely birthday party in the afternoon sun.

Sometimes, however, the dessert needs to be quick to prepare so that I can spend more time with my guests. Although meringue is relatively easy to make, you can easily get by using a meringue base from the supermarket every now and then. This can actually turn into a wonderfully delicious and easy dessert!

It is actually uncertain where meringue originally comes from, although it is often associated with Switzerland, Italy, and France. However, there is no doubt that the name is French. The name, meringue, first appeared in writing in a French cookbook from 1692, so meringue is in any case an older madame by now! She does, however, keep herself quite well 😉

Meringue is always based on sugar and egg whites, but they are also found in a variety of versions with additions like caramel or raspberry. Meringue features in many classic desserts, including Key lime pie, Baked Alaska, Pavlova, Tarte au citron, and, of course, the simple meringue kisses.

Ingredients

  • 1 pcs. Meringue Base either store-bought or homemade
  • 1 l Vanilla Ice Cream
  • 0.25 l Whipping Cream
  • 250 gram Strawberry

Instructions

  • Start by rinsing the strawberries.
  • Then cut the strawberries into quarters. Keep the green top for decoration purposes.
  • Take a bowl.
  • Pour the whipping cream into the bowl.
  • Whip the cream until it forms stiff peaks.
  • Unpack the meringue base and place it on a platter.
  • Open the ice cream container.
  • First, spread the ice cream on the meringue base.
  • Now spread the whipped cream on top of the ice cream.
  • Distribute the quartered strawberries on top of the whipped cream.
  • Garnish as desired, for example with edible decorative hearts and candles.
