
Recipe for meatloaf in a dish with potatoes and rosemary sauce
Autumn calls for warming stews, oven-baked dishes, and more. The latter is exactly what you get here; tender meatloaf with rosemary/cream sauce and potatoes – it’s all in one dish at its best.
A truly delightful and flavorful dish that was well-received by both the young and old, and as a bonus, it pretty much took care of itself in the oven most of the time…
I think the distinctive taste of rosemary complements the mild meat and potatoes very well, but if you’re not a fan of rosemary, you can replace it with another herb or simply make the cream sauce plain.
Either way, it was both easy and delicious – even for the little ones.

Meatloaf in a dish with potatoes and rosemary sauce
Ingredients
Meatloaf
- 500 gram Minced pork or veal/pork
- 1 pcs. Onion
- 3 cloves Garlic
- 1 pcs. Egg
- 35 gram Oatmeal
- 6 gram Salt
- 1.5 gram Pepper
- 50–100 gram Milk
Rosemary Sauce
- 300 gram Broth
- 250 gram Cream
- 2-3 ribs Fresh rosemary
- 15 gram Balsamic Vinegar
- Salt and Pepper a little
In addition
- 500 gram Potato
- 1/2 pcs. Leek
Instructions
Meatloaf
- Chop onions and garlic and mix with meat, eggs, oats, salt, and pepper. Add milk a little at a time (you may not need it all), just until the meat mixture is firm but not dry. Form a meatloaf and place in an ovenproof dish.
- Slice leeks and potatoes and place them in the bottom of the dish around the meatloaf.
Rosemary sauce
- Remove the rosemary leaves from the stems and chop finely. Put them in a pot with broth, cream, and balsamic vinegar. Bring to a brief boil and season with salt and pepper. Pour the sauce into the dish.
- Place the dish in a preheated oven and bake for about 40 minutes at 200 degrees Celsius (392 degrees Fahrenheit).
- Serve with a green salad
