
Recipe for homemade danish meatballs
Serving meatballs is always a good idea! Here is my best meatball recipe, which I highly recommend you try – otherwise, you can always use your mother’s (mom’s meatballs are always the best).
In my potato salad recipe, there is a bit of smoked cheese and honey to give it a smoky and sweet flavor, and I’ve added radishes to provide a crisp, bitter contrast.
If you’re not fond of smoked cheese, use strained yogurt instead.

Homemade Danish Meatballs
Ingredients
Meatballs
- 500 gram Minced veal and pork
- 1 pcs. Onion large finely grated
- 2 pcs. Egg
- 35 gram Oatmeal
- 12 gram Coarse salt
- 200 gram Milk
- Pepper from a grinder
Potato Salad
- 750 gram Potato preferably asparagus potatoes
- 100 gram smoked cheese
- 100 gram Sour Cream
- 15 gram Dijon Mustard
- 21 gram Honey or ling heather honey, warmed
- 15 gram Lemon Juice
- 50 gram Pickles coarsely chopped
- 1 bunch Radishes
Serving
- 300 gram Peas frozen or fresh peas
- 1 bunch Chives sliced
- Butter for frying
- Oil for frying
- Coarse salt
- Pepper from a grinder
Instructions
Meatballs
- Mix the meat with grated onion, egg, oats, salt, and pepper.
- Slowly stir in the milk, a little at a time, until the mixture has a smooth consistency.
- Let the mixture rest for at least ½ hour in the refrigerator to firm it up.
- Melt ½ butter and ½ oil in a pan over high heat.
- Shape the meatballs with a spoon.
- Dip the spoon in the fat in the pan before shaping each ball to prevent sticking.
- Fry the meatballs until golden, turning occasionally.
Potato Salad
- Boil the potatoes in salted water until tender, about 20 minutes.
- Peel them and let them cool.
- Whisk the smoked cheese with crème fraiche, mustard, warmed honey, and pickles with a hand mixer, and season the cream with salt and lemon juice.
- Slice the potatoes and fold them into the cream mixture.
- Trim the bottoms of the radishes, leaving a bit of the tops.
- Rinse them thoroughly and cut into super thin slices.
- Place them in ice water for 5 minutes.
Serving
- Boil the peas for a few minutes in salted water, drain, and toss them with a bit of cold butter.
- Arrange the potato salad with radishes and chives on top.
- Serve the warm meatballs with peas and potato salad.
