Recipe for large fries
Thick and delicious French fries that get three rounds in the deep fryer before landing on the plate.
The fries pair perfectly with Fish ‘n’ Chips.

Ingredients
- 2 Baked Potato
- 1 l Water
- 18 gram Coarse salt
- 1.5 l Frying Oil
Instructions
- Scrub the potatoes thoroughly before cutting them into thick sticks.
- Boil the potato sticks in water with salt (or 1 tbsp. vinegar) for 5 minutes.
- Drain the water and place the potatoes to dry on a dish towel and let them cool slightly.
- Turn on the deep fryer to 160 degrees Celsius (320 degrees Fahrenheit) and fry the fries for 5 minutes. Remove the fries and let them dry/cool on a dish towel for at least 30 minutes.
- Turn the deep fryer up to 170 degrees Celsius (338 degrees Fahrenheit) and fry the fries for 2 minutes and again place them to dry on a dish towel (for at least 30 minutes).
- Now turn the deep fryer up to 180 degrees Celsius (356 degrees Fahrenheit), fry the fries for 2-3 minutes until they are golden and crispy.
- Drain the fries on a piece of paper towel and sprinkle them with salt.
- The fries are now ready to serve.
