The ingredients in this soup blend so well together; tender chicken, curry, sweet apples, carrots, bell peppers, powerful ginger, and mild coconut milk that rounds it all off nicely. The soup takes only a little half-hour to whip up and is perfect for cool weekdays – or as an exciting dish for guests. I serve it with a mild, slightly sweet flatbread that pairs perfectly with the flavorful soup.

Indian-inspired chicken soup with greens
Ingredients
- 1 pcs. Onion
- 3 cloves Garlic
- Oil for frying
- 7 gram Curry
- 1.5 gram Chili ground
- 1.5 gram Garam Masala
- 1 pcs. Apple
- 3 pcs. Carrots
- 12 gram Fresh ginger finely chopped
- 1 pcs. Red bell pepper
- 1 l Chicken Broth
- 350 gram Chicken Breast Fillet + butter for frying and salt/pepper
- 300 gram Coconut Milk
For serving
- Herbs Fresh parsley or coriander
- Bread flatbread
Instructions
- Prepare all vegetables; finely chop the onions and garlic, peel and dice the apple and carrots, slice the bell pepper into strips.
- Heat the oil in a pot and add the curry, chili, and garam masala, letting it sizzle for about 1 minute.
- Add the onions and garlic and let them sizzle for a couple of minutes. Add the apple, carrots, and bell pepper, sizzle for a few more minutes.
- Add the broth and let the soup simmer for 10 minutes.
- While the soup is simmering, cut the chicken into cubes and brown it well in a pan with a little butter and season with salt/pepper.
- Add the chicken and coconut milk to the soup, season to taste, and serve with herbs and some bread.
