
Recipe for homemade vanilla parfait
Delicious and light ice cream that doesn’t require an ice cream machine.
You can consider this recipe as a base ice cream. You can add flavors in many different ways.
You can use the following powders to whisk into the egg mixture: cocoa, licorice powder, cinnamon, ginger, etc.
You can also fold various syrups into the mixture before pouring it into the mold. For example, it could be licorice syrup, maple, apple, caramel, coffee, mango, etc.
If you use berries, you can either use fresh berries or you can make a coulis from 150 g berries, 50 g sugar, and 25 g water, which you cook for 5 minutes and blend, strain, and cool before folding into the ice cream mixture. It can be raspberries, blackcurrants, blueberries, blackberries, forest berries, cherries, etc.

Homemade Vanilla Parfait

- Bread Form or silicone molds
- Bowl
- Immersion Hand Blender (an option)
- Whisk (an option)
- Hand Mixer (an option)
Ingredients
- 6 pcs. Egg Yolk
- 100 gram Powdered Sugar
- 12.5 gram Vanilla Sugar
- 3 turns Salt
- 300 gram Whipping Cream
Instructions
Parfait
- Put egg yolks, powdered sugar, vanilla sugar, and salt in a bowl
- Whisk the mixture until it is white and fluffy
- Whisk a light whipped cream and gently fold it into the egg mixture with a spatula
- Pour the ice cream mixture into a loaf pan and place it in the freezer for at least two hours
Presentation and Garnish
- You can put the entire ice cream mixture in a large mold and slice it or scoop it. But you can also freeze the ice cream in portions, e.g., muffin tins or various silicone molds, so they are ready for serving.
