Ingredients
- 1 pcs. Egg Yolk
- 276 gram Oil Neutral flavor
- 5 gram Mustard
- 5 gram Apple Cider Vinegar
- 5 gram Lemon Juice
- 1 pinch Salt
- 1 pinch Pepper
- 15 gram Sour Cream Can be replaced with A38 or buttermilk
- 10 gram Tomato Puree
- 5 gram English Sauce Can be replaced with HP Sauce or Fish Sauce
- Tabasco Sauce To taste
- 5 gram Rome Can be replaced with cognac or whiskey
- 4 gram Sugar
Instructions
- Start by making a mayonnaise:
- Whisk the egg yolk with the vinegar, the salt, and the pepper until it has a custard-like consistency.
- Add the oil little by little and the mustard, salt, pepper, and white wine vinegar. Add the oil gradually while whisking until the consistency is suitably thick.
- Mix the crème fraîche into the mayonnaise and then the other ingredients.
- Adjust the taste with possibly some extra salt, sugar, or lemon juice to your preference.
