Homemade Thousand Island Dressing

Ingredients

  • 1 pcs. Egg Yolk
  • 276 gram Oil Neutral flavor
  • 5 gram Mustard
  • 5 gram Apple Cider Vinegar
  • 5 gram Lemon Juice
  • 1 pinch Salt
  • 1 pinch Pepper
  • 15 gram Sour Cream Can be replaced with A38 or buttermilk
  • 10 gram Tomato Puree
  • 5 gram English Sauce Can be replaced with HP Sauce or Fish Sauce
  • Tabasco Sauce To taste
  • 5 gram Rome Can be replaced with cognac or whiskey
  • 4 gram Sugar

Instructions

  • Start by making a mayonnaise:
  • Whisk the egg yolk with the vinegar, the salt, and the pepper until it has a custard-like consistency.
  • Add the oil little by little and the mustard, salt, pepper, and white wine vinegar. Add the oil gradually while whisking until the consistency is suitably thick. 
  • Mix the crème fraîche into the mayonnaise and then the other ingredients.
  • Adjust the taste with possibly some extra salt, sugar, or lemon juice to your preference.
