Recipe for homemade ice cream sandwich

Our version of the delicious classic, the ice cream sandwich, consists of two round cocoa cookie bases with a delicious, homemade ice cream inside.

Round sandwich with ice cream and cookies

Ingredients

  • 280 gram Brown sugar
  • 100 gram Butter melted
  • 2 pcs. Egg
  • 8 gram Vanilla Sugar
  • 1.5 gram Salt fine
  • 2.3 gram Baking Soda
  • 100 gram Cocoa powder
  • 250 gram Wheat Flour
  • 4 pcs. Pasteurized egg yolks
  • 30 gram Powdered Sugar
  • 1 pcs. Vanilla Pod the seeds (can optionally be replaced with 2 tsp. vanilla sugar).
  • 0.5 l Whipping Cream

Instructions

Cookies:

  • First, mix the dry ingredients.
  • Pour everything into the bowl of a stand mixer and mix the dough. Alternatively, you can use a regular electric mixer with dough hooks.
  • When the dough is cohesive, take it out of the bowl and knead it by hand into a firm lump. Add a little water if it is difficult to combine. Ideally, refrigerate the dough for an hour.
  • Roll out the dough to about 2 millimeters thick with a rolling pin. Cut it into round cookies using a cutter or a glass (a cutter about 7.5 cm in diameter was used here). Optionally, prick a fine pattern with a chopstick or other pointed object.
  • Bake the cookies for about 10 minutes at 200°C (watch to make sure the edges do not burn).
  • After cooling, place them in the freezer so they are cold when the ice cream goes between them.

  • You can make the ice cream in two ways, either with or without an ice cream machine:

  • With ice cream machine:

  • Mix all the ingredients in a bowl.
  • Pour the mixture into the ice cream machine and start it.
  • Churn until the ice cream is ready/stopped by the machine.

  • Without ice cream machine:

  • Whip the cream into whipped cream.
  • Fold in the egg yolks, vanilla, and powdered sugar.
  • Pour the ice cream into a container and place it in the freezer.

  • When assembling the cookies, it can be done in two different ways:
  • 1. Pour the ice cream into a container, about 2 centimeters high. When the ice cream is half-frozen and firm, cut it out with the same cutter used for the cookies, then place the slice between two cookies and return to the freezer.
  • 2. Place a dollop of half-frozen ice cream on one cookie, then press the two cookies together. It looks best if you wait to scrape/cut away the excess ice cream until the sandwich has been in the freezer and the ice cream is completely frozen.
  • It is important not to crush the ice cream sandwiches when putting them in the freezer. Since the ice cream is not entirely frozen yet, you might end up squeezing/pressing the ice cream out of them. Once they are completely frozen, they can easily be stacked in a container.
