Recipe for healthy meatballs in curry

Is it actually possible to make a healthier version of the classic Danish dish ‘boller i karry’…? And if you add vegetables, how do you camouflage them so the kids will still eat it…?

It IS actually possible… I have given this favorite dish some loving treatment, added a bunch of greens, and ended up with a dish that tastes as we know it, just a bit better and also healthier?

Healthy Meatballs in Curry

Equipment

  • Sieve
  • Chef'S Knife
  • Cutting Board
  • Pot

Ingredients

Meatballs

  • 500 g Minced pork
  • 0.5 pcs. Onion Finely chopped
  • 1 handful Parsley Finely chopped
  • 1 dl Milk
  • 1 pcs. Egg
  • 1 dl Oatmeal
  • 3 tbsp Rye Flour
  • 1 tsp. Salt
  • Pepper A little

Curry Sauce

  • 1 tbsp Oil
  • 1-2 tsp. Curry If children are to eat it, start with 1 tsp and taste along the way, otherwise it may become too strong
  • 1 pcs. Onion
  • 0.5 pcs. Apples
  • 2 pcs. Carrots
  • 2 pcs. Potato
  • 4 dl Chicken Broth
  • 1 dl Coconut Milk
  • Salt
  • Pepper
  • Lemon Juice
  • Sugar A little

Instructions

Meatballs

  • Mix all the ingredients together into a smooth and cohesive meat mixture.
  • Boil the meatballs for 8-10 minutes in a pot of water with a bouillon cube.
  • Let them drain in a sieve.

Curry sauce 

  • Chop the onion and dice the apple, carrots, and potatoes.
  • Sauté them for a couple of minutes in a pot with oil and curry.
  • Add bouillon and coconut milk.
  • Let it simmer for about fifteen minutes.
  • Once the vegetables are tender, blend everything with a hand blender until you get a smooth, even sauce.
  • Season with salt, pepper, and possibly more curry.
  • If the flavor needs balancing, you can also use lemon juice and/or sugar to taste.
  • Add your meatballs to the pot and let everything simmer together for a few minutes.
  • Serve with rice and apples on top.

Notes

Tip! If you want an even healthier version, why not use cauliflower rice instead?
