Recipe for healthy and gluten-free carrot cake with raisins

Delicious cake with almond flour, enjoyed by all ages.

I make this cake for my mother when I feel she deserves some extra pampering. It is one of her favorites, and a recipe I came up with myself.

It includes both carrots and beets, and it is lactose- and gluten-free.

Prep Time: 30 minutes
Cook Time: 1 hour

Ingredients

  • 250 gram Almond Flour
  • 4 pcs. Egg
  • 2 pcs. Beets about 150-200g total
  • 2 pcs. Carrots same amount as the beets
  • 195 gram Maple Syrup you can certainly choose another type, but I always use maple or agave syrup
  • 46 gram Coconut Oil
  • 8 gram Cinnamon if you are like me and love cinnamon, you can always add another tablespoon 😉
  • 6 gram Salt
  • 150 gram Raisins it doesn't matter which kind, just choose your favorite
  • Butter or oil for the springform
  • 50 gram nuts Optional: some nuts for the topping

Instructions

  • Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit).
  • 1. Grate the beets and carrots - I usually do this in my food processor, but you can certainly do it by hand; it just takes a little longer.
  • 2. Mix the dry ingredients and raisins in a stand mixer and mix well.
  • 3. Add the eggs one at a time and mix thoroughly after each egg.
  • 4. Fold in the flour and stir until everything is combined. Then you can add the root vegetables.
  • 5. Grease a springform with oil or butter and pour the batter in. Don't worry if the batter looks a bit too wet - that's the idea 😉
  • (6). If you'd like to give the cake a bit of extra appearance, chop some nuts and sprinkle them on top of the batter. Almonds would match best due to the flour, but all nuts are delicious with this cake.
  • 7. Put the cake in the oven and bake for 50-60 minutes. When you take it out, let it rest for 5 minutes. But if you are like my mom and can't wait, that's okay too.

Notes

If you think it could use something on the side, I would suggest whipping some cream with coconut cream, cinnamon, cardamom, and chai spice while you wait for it to cool down. Make plenty, as it pairs perfectly on top of a cup of coffee.
The cake stays fresh for many days in the refrigerator
