Grilled apple tarte tatin with cream
Equipment
- 1 Foil Tray
- 1 Grill Grill method w/gas 2-4 burners: Indirect
Ingredients
- 10 pcs. Apples halves, with peel
- 100 gram butter
- 5 plate Puff Pastry cut in halves
- 100 gram Sugar
- 1 pcs. Star Anise whole
- 1 pcs. Cinnamon Stick
Cream;
- ½ liters Sour Cream
- 100 gram Powdered Sugar
- 1 tsk Cardamom ground
Instructions
Kitchen
- Distribute 10 apples on puff pastry sheets and cut the dough into 10 squares. Fold the dough around the apple (where the peel is) leaving the cut side free of puff pastry.
- Pour sugar, star anise, and cinnamon in a large foil tray.
- Mix all parts for the cream
Grill
- Set and preheat the grill to 185° C
- Place the apples on the grill rack and let them bake for about 10 minutes at indirect heat
- Turn the grill down to 150° C
- Place the foil tray with sugar and spices on the grill and add butter, letting it melt together.
- When the sugar has become caramel, place the apples with the cut side in the caramel and let them bake for about 10-15 minutes.
Arrange
- Serve warm with cream
