Recipe for gnocchi, parma, and sage

A delightful recipe for delicious gnocchi (Italian pasta made with potatoes), served with prosciutto and crispy sage.

We have the recipe from the book: “Food that Brings People Together – Camillo’s Kitchen,” and the author Jørgen Smidstrup says the following about it:

“Life hasn’t been the same since this dish revealed itself in Camillo’s Kitchen one Saturday afternoon – an utterly wonderful and simple dish. Here, the somewhat hefty gnocchi are balanced with crispy ham and assertive sage. As soon as you’ve figured out how to actually pronounce gnocchi, you’ll want to make this dish at least once a week. It’s not hard to make your own gnocchi, and when you master giving them the proper ‘ridge,’ you’ll be very proud of yourself. If you’re too busy, you’ll have to scour good food markets or well-stocked supermarkets to find freshly made gnocchi.”

Gnocchi, Parma, and Sage

Author: Redaktion
Prep Time: 45 minutes
Cook Time: 10 minutes

Ingredients

Gnocchi

  • 500 gram Potato
  • 100 gram Wheat Flour
  • 1 pcs. Egg
  • 13.5 gram Olive Oil Extra Virgin-
  • 10 gram Parmesan Freshly Grated
  • 10 gram Flake Salt

Sides

  • 12 slices Parma Ham Approximately 200 grams
  • 0.5 bunch Sage Leaves
  • 75 gram Butter
  • 36 gram Coarse salt
  • 13.5 gram Olive Oil Extra Virgin-
  • Pepper From Grinder

Instructions

  • Wash the potatoes and boil them until tender with the skin on. Drain the water and steam the potatoes well dry. Peel the potatoes and mash them thoroughly with a fork (if you have a potato ricer, this is when it comes into its own) in a bowl. Beat the egg and add it together with the flour, oil, Parmesan, and salt, and knead well with your fingers to form a smooth dough.
  • Sprinkle a little flour on the countertop and roll the dough into finger-thick sausages. Cut into approximately 1 ½ cm wide slices; the Italians now give them a little press with a fork to create ridges in the gnocchi. Let them rest for about fifteen minutes on a clean and dry kitchen towel, then they are ready for boiling.
  • Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit) with fan, spread the Parma ham on baking paper on a baking sheet, and bake the slices in the oven until they are crispy. It takes about 8-10 minutes.
  • Put a pot on with water. When the water boils, add plenty of salt to the water. Boil the gnocchi until they rise to the surface; it takes 4-5 minutes. Carefully fish them out with a slotted spoon, place them in a colander, and let them drain well.
  • While the gnocchi cooks, pull the whole sage leaves off the stems, melt the butter in a pan, and fry the leaves gently for 3-4 minutes. The butter should turn golden. Carefully toss the boiled gnocchi in the pan, and heat them through briefly. Arrange in 4 deep plates, remember to include the butter, place the crispy ham slices on top. Grate some Parmesan and freshly ground pepper over – serve immediately.

Notes

The ridged surface of the gnocchi helps to 'absorb' the sauce. And it's in everyone's interest... You can also enjoy your gnocchi with a delicious gorgonzola sauce, lots of fresh herbs and butter, or with a tomato pesto. And if you go to an Italian restaurant and they have a gnocchi dish on the menu that you just have to have – try to pronounce it in this manner; 'nyokki'.
