Gluten-Free Peppernuts

Recipe for gluten-free peppernuts

This recipe is based on the peppernuts from my childhood.

They taste (to me) like real peppernuts should taste – they have a good crispness and a perfect spice combination!

But we all have different Christmas traditions, so feel free to adjust the amount of spices or spice selection if they don’t taste like real peppernuts to you.

The recipe yields 40-50 pieces, depending on their size.

Gluten-Free Peppernuts

Equipment

  • Stand Mixer (Option 1)
  • Hand Mixer (Option 2)
  • Baking Tray
  • Baking Paper
  • Oven

Ingredients

  • 225 gram Butter soft
  • 225 gram Sugar
  • 40 gram Dark syrup
  • 30 gram Water cold
  • 7.8 gram Cinnamon
  • 6 gram Cardamom
  • 9.6 gram Baking Soda
  • 0.6 gram White pepper
  • 1 pcs. Egg
  • 100 gram Cornstarch
  • 400 gram Rice Flour preferably whole grain

Instructions

  • Mix all the ingredients together in a mixer or using the dough hooks on a hand mixer.
  • Let the dough rest in the refrigerator for at least an hour.
  • If the dough isn't cold enough, the peppernuts will spread out in the oven.
  • Roll the dough into desired size balls.
  • Be aware that they will rise quite a bit in the oven.
  • Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit) and bake the peppernuts for 10-12 minutes.
