Recipe for fried couscous with chicken and greens
Tonight’s menu required minimal effort, but was both healthy, filling, packed with flavor, and ready in just 10 minutes – it really delivers sometimes. And at the same time, leftovers were cleaned out.
In the bowl is fried couscous with spicy chicken, cabbage, carrots, and zucchini…
The couscous could just as easily have been rice, bulgur, or whatever similar leftover you have.
The chicken fillet was leftover from another day, but could be replaced with ground meat or other leftover meat – and the vegetables, well, just use whatever you have. The whole thing is seasoned with soy sauce, salt, pepper, and a bit of curry – simple but delicious.
Here’s the recipe with what I used, so there’s something to work from, and then just switch it out as needed.
