French bread with oatmeal
A really delicious French bread that rises just as it should. The bread is baked with oatmeal, which adds extra flavor to the bread and makes it a bit healthier. Use the bread for breakfast or brunch, or eat it as an accompaniment to soups.
Ingredients
- 25 gram Yeast
- 500 gram Water
- 12.5 gram Sugar
- 18 gram Salt coarse
- 42 gram Oil
- 80 gram Oatmeal
- 105 gram Tipo 00 Flour
- 315 gram Wheat Flour maybe a little more or less
Instructions
- Crumble the yeast into a mixing bowl or dough bowl.
- Add water, salt, sugar, and oil and whisk with a hand whisk until the yeast is completely dissolved.
- Add the flour little by little, until the dough is smooth and pliable.
- Let the dough rise for 30 minutes under a shower cap or a tea towel.
- Flatten the dough on a floured surface into a large square.
- Fold the ends towards the center and press the folds together.
- Roll the dough into a log (roll from top to bottom).
- Place the dough with the seam side down in a baking form lined with parchment paper.
- Let the bread rise for 30 minutes.
- Score the bread and sprinkle it generously with flour so the crust becomes crisp and doesn't burn.
- Bake for 10 minutes at 250 degrees Celsius (482 degrees Fahrenheit) with fan. Then reduce to 200 degrees Celsius (392 degrees Fahrenheit) with fan and bake for another 20 minutes.
