Recipe for frangipane with pears
One of my favorite tarts: Frangipane with pear, is a juicy and crispy cake at the same time.
It is easy to make: Super delicious shortcrust pastry and if you have a mini chopper/blender, it takes 10 seconds to make the almond flour.

Ingredients
Shortcrust Pastry
- 210 gram Flour
- 75 gram Powdered Sugar
- 50 gram Butter
- 1 pcs. Egg
Frangipane
- 1 pcs. Egg
- 75 gram Butter
- 75 gram Almonds blended to flour
- 75 gram Sugar
- 4 gram Vanilla Sugar
In addition
- 2 pcs. Pear ripe
- Sugar
- Fresh thyme
Instructions
Shortcrust Pastry
- -
- Bring the dough together without kneading.
- Place it in a metal form.
- Prick the bottom with a fork.
- -
- Whisk together and spread on the shortcrust pastry base.
- Slice 2 ripe pears and place them on the frangipane.
- Sprinkle with a little sugar and bake for about 20-25 minutes at 180°.
- Optionally, sprinkle a little fresh thyme on top - it really suits the tart and tastes fantastic.
- Enjoy cooled, but slightly warm with whipped cream.
