Recipe for flash-fried mackerel

Flash-fried mackerel
Ingredients
- 4 pcs. Mackerel Fillet without skin
- 2 pcs. Avocado
- Peas 4 handfuls - fresh
- Pea Shoots 2 handfuls
Instructions
- Mash the avocados finely, chop half of the peas finely and mix them with the avocado.
- Season with lemon, salt, and pepper.
- Heat a pan to high heat and place the remaining peas on it, they should get a bit blackened.
- Remove them once they have black spots.
- Make 1 cm apart scores on the short side of the mackerel.
- Use a blowtorch to char the mackerel, only char the skin side.
- It should get a good char.
- Sprinkle with salt.
- Squeeze a bit of lemon over the fish.
- Plate the dish.
- Distribute the mash in two spots on the plate, place the mackerel on top.
- Sprinkle the charred peas over.
- Distribute pea shoots over the dish.
