Recipe for flash-fried mackerel

Flash-fried mackerel

Ingredients

  • 4 pcs. Mackerel Fillet without skin
  • 2 pcs. Avocado
  • Peas 4 handfuls - fresh
  • Pea Shoots 2 handfuls

Instructions

  • Mash the avocados finely, chop half of the peas finely and mix them with the avocado.
  • Season with lemon, salt, and pepper.
  • Heat a pan to high heat and place the remaining peas on it, they should get a bit blackened.
  • Remove them once they have black spots.
  • Make 1 cm apart scores on the short side of the mackerel.
  • Use a blowtorch to char the mackerel, only char the skin side.
  • It should get a good char.
  • Sprinkle with salt.
  • Squeeze a bit of lemon over the fish.
  • Plate the dish.
  • Distribute the mash in two spots on the plate, place the mackerel on top.
  • Sprinkle the charred peas over.
  • Distribute pea shoots over the dish.
