Recipe for flank steak on the pan

The other day, I made an incredibly tender and juicy flank steak cooked in a pan, and I promise you, it’s not at all a difficult piece of meat to tackle! Flank steak is easy to cook super juicy. Just remember to take the meat out of the refrigerator well in advance of cooking, so it’s not cold when it goes into the pan. This holds true for all meats; they benefit from tempering before cooking because cold meat on a hot pan will cause the meat to release a lot of moisture – and we want to retain that moisture inside the meat. The moisture will settle in the pan, causing the meat to begin to boil rather than sear, and you won’t get a good crust. Additionally, it’s best to cook your flank steak medium-rare or less, as overcooking it can make it a bit dry. Marinating the flank steak beforehand also infuses it with plenty of delightful flavors.Flank steak in the pan

What is flank steak?

Flank steak is a relatively inexpensive, albeit quite overlooked, cut located beneath the animal’s tenderloin and not far from the chest. It’s curious that flank steak is somewhat overlooked, given that we Danes love our beef – and with good reason: Beef goes with most dishes and is packed with flavor and good nutrition.

What side dishes go well with flank steak?

Flank steak can be served with a variety of different sides, but you might want to try it with grilled pointed cabbage and potato salad, which pair perfectly with this tender piece of meat. Are you really fond of sauce? Then you can make a delicious pan sauce from the drippings – in this recipe, you can see how to make a really wonderful and easy pan sauce! However, we skipped the sauce this time around.

Equipment

  • Pre-Slicing Knife
  • Frying Pan
  • Cutting Board

Ingredients

  • 600 gram Flank Steak
  • 91 gram Oil neutral in flavor
  • 2 cloves Garlic
  • 2 ribs fresh rosemary
  • Flake Salt
  • Pepper from the grinder

Instructions

  • Pour the oil into a plastic bag.
  • Press the garlic into the oil and add salt and pepper.
  • Place the flank steak into the bag.
  • Close the bag.
  • Turn and shake the bag and let the marinade spread evenly over the meat. Let it sit for 15 minutes. Unpack the steak from the bag.
  • Take a look at the flank steak and note the direction the meat fibers run. This is important when cutting the steak into slices, as we want to cut across the fibers.
  • Put 1 part oil to 1 part butter in a hot pan. You may also choose to use ghee.
  • Place the flank steak on the hot pan. I cooked the steak medium rare. That's about 5 minutes on each side. You know it's cooked medium rare by using the following method: Relax your right hand. Let the thumb and index finger of your right hand lightly touch without pressing. Now use the index finger of your left hand to feel the "pad" under the thumb of your right hand: This is how the steak will feel when it is rare. If you give it a moment longer than this, the steak will be medium rare. If you prefer your steak cooked differently, you can see how to do it here.
  • Take the cooked flank steak off the pan.
  • Let the meat rest for 5 minutes. Do not cover it with a cloth or foil, as this creates moisture and softens the crispy crust.
  • Slice the meat across the fibers.
  • Serve.
