
Recipe for croque monsieur
The original and classic French toast, which is quite different from a Parisian toast. This grilled sandwich contains smoked ham, cheese, Béchamel sauce, and even more cheese on top.
It is believed to have been invented in the early 1900s in France when a café ran out of baguette and instead used toasted bread, which was also popular in Australia, according to the French site Club-Sandwich.net.
A delightfully heavy dish that deserves a good salad on the side.
If you serve it with a fried or poached egg, you have a Croque Madame.

Ingredients
Toast
Mornay sauce
- 28 gram Butter large
- 16 gram Flour large
- 0.5 l Whole Milk about
- Salt and Pepper
- Nutmeg grated
Instructions
Bechamel Sauce
- Melt the butter over medium-high heat in a small saucepan.
- Add the flour while vigorously whisking with a whisk.
- Let it "bake" for 3-5 minutes until it has collapsed and cooked through, so there's no raw flour taste left.
- Add 1/3 of the milk and whisk well to prevent lumps from forming.
- Add another 1/3 of the milk and continue whisking. When it thickens, add the rest of the milk.
- Season with salt, pepper, and grated nutmeg.
- Remove the sauce from the heat. It can rest for a bit before use.
Toast
- Heat up a pan, and when it's hot, add the butter.
- Spread about 1 tbsp. of mustard on each of the 2 slices of bread.
- Place cheese and ham on them and cover with the other 2 slices of bread.
- Fry the bread in the pan while placing something heavy on top, so it cooks evenly. It could be a pot or a flat-bottomed dish.
- Flip them when they are colored and repeat the frying on the other side.
Final Steps
- Finish your toasts in a preheated oven at about 225 degrees Celsius (437 degrees Fahrenheit) with convection. You can also use the grill setting, just keep an eye on them as it goes faster.
- Place them in an ovenproof dish and pour the sauce over. Grate a generous amount of cheese on top and put the dish in the oven.
- Bake for about 10 minutes. The goal is to gratinate them so the cheese melts and colors.
- Serve with a salad, and if you poach an egg or fry an egg and serve it with your toast, you have a Croque Madame.Bon appétit.
