Recipe for creamy pasta dish with chicken, cauliflower, and zucchini
A delicious and easy weekday dish with tender chicken, fresh cauliflower, mushrooms, and zucchini – all simmered in a luscious cream sauce.
Cream and mushrooms have always been a match made in heaven, and combining them with chicken and fresh pasta – well, it certainly doesn’t get any worse! The cauliflower adds a delightful freshness to the dish, and basil and thyme ensure plenty of wonderful flavors.
I use fresh pasta in this dish, as it can then be cooked with the other ingredients at the end, absorbing plenty of flavor and creaminess from the sauce.
For serving, I sprinkle the dish with Parmesan – it just complements pasta dishes incredibly well!
This dish is a quick one, perfect for weekdays, as it’s ready in under 30 minutes.

Creamy pasta dish with chicken, cauliflower, and zucchini
Ingredients
- 1 pcs. Onion
- 125 gram Mushroom
- 350 gram Chicken Breast
- 200 gram Cauliflower
- 1 handful Basil fresh, chopped
- 400 gram Water
- 200 gram Cream
- 1 cubes Chicken Broth
- 6 gram Salt
- 1.5 gram Pepper
- 1 gram Thyme dried
- 25 gram Parmesan grated
- 200 gram Pasta
Topping
- Parmesan grated
Instructions
- Chop the onion finely and slice the mushrooms. Sauté both in a bit of butter in a deep pan or pot until the mushrooms are lightly browned.
- Cut the chicken into cubes/strips and add to the pan, let it brown.
- Grate the zucchini coarsely and cut the cauliflower into small bite-sized pieces. Add both to the pan along with all other ingredients – except the pasta.
- Let it all simmer for a few minutes.
- Add the pasta and let it simmer until the pasta is tender. If the sauce is too thin, let it simmer a bit longer until it reduces more, and if it's too thick, add a little more water.
- Season to taste and serve with a bit of grated Parmesan on top.
