Here you get a delightful salad that is both easy, quick, and truly delicious! A salad that is easy to manage when you want something a bit extra good and healthy – but without being complicated. It only takes 15 minutes to whip up, and you get crispy broccoli and cauliflower in a creamy dressing, tart apples, sweetness and chewiness from dried cranberries, and crunch from the salty bacon.

Here you get a delightful salad that is both easy, quick, and truly delicious! A salad that is easy to overlook when you need something extra good and healthy – but without being complicated. It only takes 15 minutes to whip up and you get crispy broccoli and cauliflower in a creamy dressing, tangy apples, sweetness and chewiness from dried cranberries, and crunch from the salty bacon. It tastes sooo good and leaves both the stomach and senses immensely satisfied.

I eat this salad as a meal on its own for both lunch and dinner, but it can also easily be used as a side dish. If you are vegetarian, you can replace the bacon with salted almonds – they do a similar job! No matter what, it’s a delightful salad that I personally return to again and again – hope you like it.

The salad is great all year round, but it also excels on a Christmas (lunch) table. The fresh ingredients with a Christmas touch from the cranberries are a wonderful supplement to the slightly heavier Christmas dishes.

Cook Time: 12 minutes

Ingredients

  • 1/2 package Bacon strips or cubes, it doesn't matter
  • 200 gram Cauliflower
  • 100 gram Broccoli
  • 1 pcs. Apples
  • 25 gram Cranberry dried - can be replaced by raisins
  • 16 gram Pumpkin Seeds

Dressing

  • 100 gram Plain yogurt or plain yogurt
  • 5 gram Lemon Juice
  • 10.5 gram Honey liquid
  • Salt and Pepper

Instructions

  • Fry the bacon until crispy in a pan.
  • Divide the cauliflower and broccoli into small florets and cut the apple into small cubes.
  • Mix the dressing together; first skyr, lemon juice, and honey, and season with salt and pepper. Toss the dressing with cauliflower, broccoli, apples, and cranberries.
  • Serve in a bowl or on a plate and top with bacon and pumpkin seeds.
