This delightful classic is good every time! Old-fashioned apple cake with macaron crunch and whipped cream – uuuhm…
Easy to make, fairly quick, and just good…
I have added a bit of crème fraîche to the cream – the acidity complements the sweet cake very well and the cream becomes more – yes… creamy. But it can easily be omitted if you prefer.
The crunch is a mix of macarons and apple cake crumbs, but it can also be just one or the other – do what you like best.
Regardless, a wonderful classic with a delightful mix of sweet, tart, crunchy, and creamy…


Classic Deluxe Apple Cake

Ingredients
- 1,5 kg Apples preferably tart
- 125 gram Sugar
- 8 gram Vanilla Sugar
- 50 gram Water
- 200 gram Macaroons
- 18 gram Brown sugar
- 250 gram Cream
- 100 gram Sour cream
- 12 gram Powdered Sugar
- 4 gram Vanilla Sugar
Instructions
- Peel and cut the apples into large cubes. Put them in a pot with sugar, vanilla sugar, and water - let simmer for 15 minutes with a lid on, then let cool.
- Lightly crush the macaroons and mix them with brown sugar.
- Whip the cream until light and fluffy, then fold in the sour cream, powdered sugar, and vanilla sugar. Layer macaroons, apple compote, and whipped cream in small glasses or a larger bowl - serve immediately or the next day.
