
Recipe for chops with vegetables in tomato/cream sauce
Looking for some cozy simmering on the menu today…? Then try this delightful skillet full of quick and easy pork chops in a creamy tomato sauce with plenty of vegetables.
I’ve used leeks and mushrooms in the sauce and topped it with crispy bacon.
Everything is cooked in one pan, making it both easy and quick, filled with flavor and creamy deliciousness.
I served it all with brown rice.

Chops with vegetables in tomato/cream sauce
Ingredients
- 200 gram Diced bacon
- 4 pcs. Pork Chops
- 1 pcs. Onion
- 2 cloves Garlic
- 200 gram Mushroom
- 2 pcs. Leek
- 1 can Peeled tomatoes
- 30 gram Tomato Puree
- 100 gram Water
- 1 pcs. Vegetable stock cube
- 300 gram Cream e.g. cooking cream
- 14 gram Paprika
- 1.5 gram Chili
In addition
- 360 gram Rice preferably whole grain
Instructions
- Fry the bacon crisply in a dry pan. Remove the bacon from the heat, but leave most of the fat.
- Brown the chops in the pan – it can be quite hot so they get a good sear. Remove the chops from the pan and turn down to medium heat.
- Finely chop the onions and garlic and sauté in the pan. Slice mushrooms and leeks and add to the pan – let cook for 2-3 minutes.
- Add the canned tomatoes, tomato paste, water, bouillon cube, cream, paprika, and chili to the pan. Stir well and season with salt and pepper.
- Put the rice to cook and return the chops to the pan.
- Let the pan with sauce and chops simmer for 10-15 minutes while the rice cooks, then serve everything with a sprinkle of bacon on top.
