Recipe for easy chocolate cookies

A truly delicious recipe for large American cookies with the perfect soft and slightly chewy texture. 

The recipe can be used as is or seen as a base recipe for other cookie variations. See suggestions for variations in the note at the bottom of the page.

Easy Chocolate cookies

Ingredients

  • 425 gram Wheat Flour
  • 7.2 gram Baking Soda
  • 3 gram Salt fine salt
  • 8.4 gram Vanilla Sugar
  • 250 gram Butter
  • 275 gram Brown sugar
  • 175 gram Sugar
  • 3 pcs. Egg
  • 450 gram Dark chocolate or the chocolate you like best

Instructions

  • Whisk sugar, brown sugar, and butter until light and creamy with a hand mixer.
  • Add the eggs one at a time – whisk well between each egg.
  • Mix flour, baking powder, salt, and vanilla sugar together in a bowl. 
  • Sift the flour mixture into the butter-egg mixture. Stir the dough together with a spoon or whisk at the lowest speed. Stop when the dough is combined, and the ingredients are mixed. Do not mix for too long, as your cookies will have the wrong texture.
  • Chop the chocolate into large chunks the size of hazelnuts. Add it to the dough.
  • Using 2 tablespoons, place the dough in dollops on baking sheets lined with parchment paper. Remember to leave space between each cookie as they will spread. 
  • Bake your cookies in the oven at 200 degrees Celsius (392 degrees Fahrenheit) for 12-15 minutes. 
  • Let the cookies cool on a wire rack.

Notes

When the dough is mixed, you can divide it into smaller portions and stir different fillings into each portion. 
Examples of fillings:
  • Whole hazelnuts and chocolate.
  • White chocolate and freeze-dried raspberries.
  • Dried cranberries or dried blueberries.
