Ingredients

Chimichurri:

  • 2 handful Parsley finely chopped
  • 4 clove Garlic finely chopped
  • 1 pcs. Chili red - deseeded and finely chopped
  • 1 tsp. White Wine Vinegar
  • 1 tsp. Oregano
  • 50 ml Olive Oil
  • Salt to taste

Chipotle Mayo:

  • 2 pcs. Egg Yolk
  • 1 tablespoon Apple Cider Vinegar
  • 200 ml Rapeseed Oil
  • 1 clove Garlic finely chopped
  • 2 tablespoon Chipotle Chili

Bacon:

  • 8 slices Bacon

Smash Burgers:

  • 450 gram Ground beef 18% fat or higher
  • Salt
  • 4 slices cheese
  • 4 pcs. Brioche Burger Bun

Instructions

Chimichurri:

  • Mix parsley, garlic, chili, white wine vinegar, oregano, and olive oil together in a bowl.
  • Season with salt and stir well.

Chipotle Mayo:

  • Put egg yolks, apple cider vinegar, canola oil, garlic, and chipotle chili in a tall, narrow glass.
  • Blend with an immersion blender from the bottom up until the mayonnaise is thick and creamy.

Bacon:

  • Fry the bacon in a pan over medium heat until crisp and golden.

Smash Burgers:

  • Divide the ground beef into 113-gram balls and season with salt.
  • Heat a pan or griddle over medium-high heat.
  • Place a ball on the pan and press it flat with a spatula. Cook for 1 minute.
  • Flip the patty, add a slice of cheese, and cover the pan. Cook for an additional 1 minute.

Serving:

  • Cut the brioche buns in half and lightly toast them.
  • Spread the bottom of the buns with chipotle mayo.
  • Place the patty with cheese on the bun, top with crispy bacon and chimichurri.
  • Place the top bun on and serve immediately.
