
Recipe for chicken salad with pineapple, bacon, and curry dressing
A quick and delicious salad for days when dinner just needs to be fast or lunch needs to be a bit extra special. Besides chicken, the salad includes pineapple, mango, and bacon – all complemented by a creamy curry dressing and crunchy garlic croutons.
Chicken, bacon, and curry are just always a match made in heaven, and with mango and pineapple in the mix, you get both a bit of sweetness and freshness, which goes great with everything else. Bacon and croutons add a touch of saltiness and a good crunch. In this salad, you get everything you need to satisfy your stomach and taste buds, and best of all, it’s ready in just 15 minutes!
If you’re not a fan of pineapple, they can be easily replaced with apples, and the mango can be excluded if you don’t have one on hand.

Chicken salad with pineapple, bacon, and curry dressing
Ingredients
Chicken Salad
- 60 gram Bacon in cubes
- 2 pcs. Chicken Fillet fried
- 100 gram mixed salad
- 1 handful Arugula
- 2 slices Pineapple
- 1/2 pcs. Mango
- 3 pcs. Scallion - Spring Onions
- 1 handful Chives can be omitted
- 1 handful Dill fresh - can be omitted
Curry Dressing
- 1 dl Plain yogurt
- 2 spsk Mayonnaise
- 1 tsp. Curry
- 1 tsp. Honey
- 1 tsp. Lemon Juice
- Salt and Pepper
Instructions
- Start by frying your bacon until crispy in a pan.
- Cut the chicken into smaller pieces, pineapple and mango into cubes, and spring onion into thin slices.
- Mix chicken, pineapple, mango, and spring onion with salad and arugula.
- Finely chop chives and dill and mix into the salad.
- Arrange on a plate and top with bacon and croutons.
- Mix all ingredients for your dressing together and serve it on the side of the salad.
