Chia pudding ala risifrutti; delicious chia pudding with vanilla/almond flakes and topped with cherry sauce. Reminiscent of risalamande or risifrutti as we know it from the stores – just healthier and it tastes amazing! This version is made with cottage cheese – it might sound strange, but you can’t taste it. On the other hand, it ensures authentic consistency and great satiety.

The great thing about chia pudding – besides its taste and healthiness, is that it can be made the day before, chilled in the fridge and then you have a quick breakfast ready the next day. But it can actually also be made on the same day and just left to sit while you take a shower or handle other practical tasks.

This dish can of course be enjoyed as breakfast or a snack, but could also easily work as a light dessert.

If you’re not into cherry sauce, you can eat it with strawberry or rhubarb compote instead.

Ingredients

  • 24 gram Chia Seeds
  • 200 gram Milk
  • 2.5 gram Almond Aroma
  • 4 gram Vanilla Sugar
  • 100 gram Plain yogurt vanilla
  • 100 gram Cottage Cheese
  • 120 gram Cherry Sauce

Instructions

  • Mix chia seeds, milk, almond essence, and vanilla sugar together, and let it sit for at least 30 minutes or overnight in the refrigerator.
  • The next day, fold in the skyr and cottage cheese.
  • Serve in glasses and top with cherry sauce.
