Recipe for cheese
Fresh cheese tastes so delightful on a slice of homemade French bread, whether for breakfast, lunch, or brunch. Personally, I like it with plenty of fresh herbs, which I often use from my own garden.
This one is made with buttermilk, and I flavored it with freshly squeezed lemon juice and olive oil. So delicious! And you can use whichever herbs and spices you prefer. Don’t hold back; you might discover an exciting new flavor combination!
It might sound like a lot of work, but it’s much easier to make than you’d think. Most of the time, it takes care of itself (though you should remember to keep an eye on it).
Fresh cheese is a wonderful thing to have in the fridge, so there’s always something delicious to spread on your bread when you crave a little snack.

Equipment
- Canning Jar
- Cutting Board
- Chef'S Knife
- Frying Pan
Ingredients
- 1 l Buttermilk preferably organic
- Salt and Pepper freshly ground, to taste
- Lemon Juice to taste
- Olive Oil to taste
- Herbs fresh, e.g., chives, tarragon, and thyme
Instructions
- Pour the buttermilk into a pot and heat it slowly over low heat. Do NOT stir the pot along the way. The whey should separate by itself and settle at the bottom. It takes some time, but it is well worth the wait. Keep an eye on it continuously so that it doesn't come to a boil.
- When the curd forms on top, pour everything through a cheesecloth or alternatively a wet muslin cloth.
- Adjust the taste of the fresh cheese with freshly ground salt and pepper, as well as olive oil, lemon, and fresh herbs.
