
Recipe for cauliflower rice with lemon and parsley
Cauliflower rice is a great alternative to regular rice – it is healthier and its flavor is quite neutral, so it can be used in most dishes. I use it just like regular rice; for stews, etc. It also works well in various salads to add some bulk. You can add precisely the flavor you want to the cauliflower rice using different oils, spices, herbs, and optionally garlic or other vegetables. This version is my basic recipe, it is simple and can be used for most dishes – and it’s ready in just 10 minutes.
When I make cauliflower rice, I usually stir-fry it because I like it to have some texture when I eat it. However, cauliflower rice can also be boiled; you simply grate the cauliflower and pour boiling water over it, then let it sit for 30 seconds – or longer if you want it softer.
In this version, they are stir-fried, but of course, you can adjust it based on what you think is best and easiest.

Cauliflower Rice with Lemon and Parsley

Ingredients
- 1 pcs. Cauliflower large
- 27 gram Olive Oil
- 15-30 gram Lemon Juice to taste
- lidt Salt and Pepper
- 1 bunch Parsley fresh
Instructions
- Remove the green leaves and cut the stalk from the cauliflower head. Divide the head into quarters and grate them on the coarse side of the grater.
- Heat the olive oil in a pan and add the cauliflower along with lemon juice, salt, and pepper. Let it fry for 3 – 4 minutes (or longer if you want them softer)
- Chop the parsley and mix it into the cauliflower rice, and they are ready to use.
