Recipe for caramelized figs with cardamom cream
In my youth, it suddenly became very fashionable to eat burnt figs, which are the same as caramelized figs.
This homemade version, using fresh figs, tastes so much better.
The recipe comes from my book: “Meze – Savory, Snacks, and Small Dishes from the Middle East“.

Ingredients
Caramelized figs with cardamom cream
- 1 pcs. Vanilla Pod
- 100 gram Sugar
- 8 pcs. Figs about 2 figs per person
- 75 gram Butter
- 250 gram Mascarpone or kaymak
- 16 gram Powdered Sugar
- 2 gram Cardamom
Notes
Tip: Kaymak is reduced cream, just like Italian mascarpone or English clotted cream. You can easily substitute it with crème fraîche or lightly whipped double cream (50%). If using crème fraîche, prefer the full-fat version at 38%.
