Recipe for candied lime

Here you’ll get the recipe for delicious, candied, and dehydrated lime slices, which make a great garnish on a beautiful dessert. 

In this version, the lime slices are candied before being dehydrated, giving the lime a sweet flavor. In the dehydration process, the lime slices are dried in a dehydrator that circulates warm air evenly around the oven, resulting in the moisture in the lime evaporating. What you have left are dried lime slices with an intense flavor and energy density. 

You can use the dehydrated lime slices in desserts as a flavor enhancer or as a garnish.

Equipment

  • Dehydrator
  • Pot

Ingredients

  • 1 pcs. Lime
  • 85 gram Sugar
  • 100 gram Water

Instructions

  • Take a small pot and bring water and sugar to a boil.  Cut the lime into thin slices. Place the slices in the sugar syrup and let it boil for 3 minutes.  Remove the pot from the heat and let it steep for 10 minutes.  Now take the lime slices out of the sugar syrup and let them cool on a piece of baking paper.  Then place the lime slices on a tray in the dehydrator.  Dry/dehydrate the lime slices for 8 hours.
