Recipe for delicious burning love

I have nothing but love for “Burning Love”!

“Burning Love” is an ultra-classic Danish dish with very few ingredients, but on the other hand, a completely enchanting taste – every time!

This is the traditional recipe with thick, creamy mashed potatoes, fried bacon, and onions fried in bacon fat. So, this is not the place to be afraid of fat.

Moreover, it is quick and easy to make. The absolute only requirement is just that you use good bacon, not the cheapest from the supermarket. It makes all the difference.

Ingredients

Bacon/onion mixture

  • 400 gram Bacon choose a good one
  • 3 pcs. Onion
  • Butter for frying – optional

Mashed Potatoes

  • 1.5 kg Potato choose a variety suitable for mashing
  • 75 gram Butter
  • 100 gram Milk or cooking water from the potatoes
  • Spices salt and pepper
  • Nutmeg grated – optional
  • 1 bunch Broad leaf parsley chopped

Instructions

Bacon/Onion Mixture

  1. Cut the bacon into smaller pieces/cubes.
  2. Peel the onions and cut them in half. Then thinly slice them.
  3. Heat a frying pan and fry the bacon until it is crisp and golden. 
  4. Remove the fried bacon from the pan and place it on a plate. Set aside.
  5. Fry the onions in the bacon fat until they are golden and soft. Add a bit of butter if there’s not enough bacon fat.
 

Mashed Potatoes

  1. Peel the potatoes and cut them into smaller pieces.
  2. Put them in a pot and cover with water. Do not add salt to the water!
  3. Boil the potatoes until they are completely tender. This takes about 20 minutes.
  4. Drain the water from the potatoes and add butter in small pieces.
  5. Mash the potatoes with your preferred tool – for example, an electric mixer – and add milk until the mash reaches the desired consistency. However, I use a whisk to mash them?
  6. Season the mash with salt, pepper, and optionally grated nutmeg.
 

    Serving

    • Serve the mashed potatoes with the bacon/onion mixture and garnish with chopped parsley. 
    • Burning Love
