
Recipe for bulgur salad with tomatoes, bell pepper, feta, and dressing
Delicious and colorful bulgur salad with lots of small tomatoes in different colors. Additionally, cucumber, bell pepper, and feta – all tossed in a truly delicious and flavorful dressing.
I made this salad with a focus on the tomatoes – they taste really delightful right now and so different! Depending on which ones you choose. So even though there aren’t many ingredients in this salad, there are plenty of different flavor impressions from both sweet and slightly tart tomatoes, creamy feta, and crunchy bell pepper.
The dressing is made with a bit of chili, garlic, and ginger, which adds a wonderful flavor to the mild salad.
We ate it as a side dish to barbecue today, which worked perfectly… but it can also be eaten just as it is or with meatballs, chicken skewers, or other dishes.
No matter what, it’s both easy and good and a fireworks display of colors and flavors.

Bulgur salad with tomatoes, bell pepper, feta, and dressing

Ingredients
Salad
- 160 gram Bulgur
- 250 gram Cherry Tomatoes different colors are welcome
- 0.5 pcs. Red bell pepper
- 0.25 pcs. Cucumber
- 125 gram Feta coarsely chopped
Dressing
- 45 gram Olive Oil
- 15 gram Lemon Juice
- 1 clove Garlic crushed
- 2 gram Fresh ginger grated
- 0.5 gram Chili ground
- 21 gram Honey liquid
- Salt and Pepper a little
Instructions
- Set the bulgur to boil in plenty of lightly salted water.
- They need 15-20 minutes; check when they are fully cooked.
- They should still have a bit of bite.
- Mix all the ingredients for the dressing and toss it with your drained bulgur.
- Cut tomatoes, bell pepper, and cucumber into cubes and toss them with the bulgur.
- Arrange in a dish and top with feta - serve
