Brownie with milk chocolate

Recipe for brownie with milk chocolate

I love brownies – especially those with a moist, gooey center! And they should definitely be made with dark chocolate with a high cocoa content.

– But! My father-in-law is not that fond of very bitter chocolates, so I thought I would try a version with milk chocolate instead – and how did it turn out?

I based it on the world’s best brownie recipe, where the dark chocolate was simply replaced with milk chocolate. The brownie thus became slightly milder in taste but still tasted fantastic and richly chocolatey!

This dream of a chocolate brownie is great if you love chocolate but are not so keen on bitter, strong chocolates! ?


Where does the brownie come from?

The brownie is, not surprisingly, an American “invention.” The name, brownie, first appeared in writing at the end of the 1800s, but it wasn’t until the early 1900s that we started to see versions of the chocolate brownie that resemble what we know today.

The brownie is one of the Americans’ favourites in the “cake world,” and although this sinful baked good is a relatively new addition to the dessert genre, there is quite a bit of uncertainty about the brownie’s background story.

One of my favorites is the story that claims the delicious, firm chocolate brownie came into being when a chef didn’t have enough flour to bake his cake. Another story claims that a housewife from Bangor, Maine, forgot to add baking powder to her chocolate cake. Instead of throwing it out, she cut the flat cake into squares and served it.

It’s funny how these background stories always present recipes as something that came about by chance, but regardless, it’s entertaining and very cozy 🙂


Is a brownie a cake?

I think it’s fair to call a brownie a cake, but if we are being completely correct, a brownie is actually classified as a “chocolate cookie bar” and not technically a cake. The reason for this is that brownies fall under “finger food,” like cookies, whereas cakes are eaten with a fork.

Again, this is just if we want to be completely by the book. And it doesn’t always have to be, right?


Brownie – with or without nuts?

It’s really a matter of taste whether a brownie should be baked with or without nuts. Nuts give a fantastic bite to a brownie, and the nutty flavor pairs superbly with the chocolate flavor, especially when we are working with darker and more bitter chocolate.

I feel that this slightly milder brownie is already well-rounded by the milk chocolate, but if you want even more bite in your brownie, you can add hazelnuts or walnuts – that’s also really delicious!


Should a brownie be gooey or fully baked?

There are thousands of brownie recipes, some where the brownie is completely firm and more “dry,” like a cake base, and others where the brownie is gooey and moist.

Both versions are completely correct – and very delicious.

I am particularly fond of a super-gooey brownie, but you can certainly give it a bit more time in the oven if you prefer. An extra 5-10 minutes will give you a firmer cake.

Ingredients

  • 250 gram Milk Chocolate
  • 261 gram Butter melted
  • 230 gram Sugar
  • 4 Egg
  • 50 gram Cocoa powder
  • 130 gram Wheat Flour
  • 5 gram Flake Salt a good quality, for example, Maldon

Instructions

  • Place a saucepan on the stove over low heat.
  • Add butter and chocolate into it. Stir the butter and chocolate together until smooth.
  • Then let it cool for 5-10 minutes.
  • Put sugar and eggs in a bowl.
  • Whisk it into a fluffy mixture with a whisk.
  • Sift cocoa powder and flour into the mixture and gently fold it together.
  • Add sea salt flakes. Pour the cooled chocolate and butter mixture into the mixture. Gently stir with a spatula.
  • Line a springform pan, a pie dish, or a baking pan with parchment paper.
  • Pour the brownie batter into the pan.
  • Place the brownie in the cold oven.
  • Turn the oven on to 170 degrees Celsius (338 degrees Fahrenheit) (convection).
  • Let the brownie bake for 50 minutes.
  • Remove the finished brownie from the oven and let it cool. It's even better if you let it sit until the next day! If you simply cannot wait, the brownie will benefit from sitting a bit before enjoying.
  • Cut the brownie into appropriate sizes and optionally sprinkle with a bit of extra sea salt flakes. Serve the brownie with creamy vanilla ice cream that has been left out on the counter for a bit before serving, and optionally decorate with some fresh raspberries.
