Ingredients
Braised pork
- 4 pcs. Pork preferably pieces with a lot of meat, about 200 g each
- 4 pcs. Bay Leaf
- 1 pcs. Stock Cube pork
- 5 pcs. Peppercorns
- Water
Peas with bacon
- 3 handfuls Peas fresh
- 1 package Bacon cut into small pieces
Nem Blanquette sauce
- 2 pcs. Egg Yolk
- 200 gram Butter
- 12 gram Sour cream
- 15 gram White Wine Vinegar
- Salt and Pepper
Fried scallions
- 1 pcs. Pointed Cabbage divided into 4 pieces
- 1 handful Parmesan freshly grated
- 30 gram Lemon Juice
- Oil a little, for frying
- Butter a little, for frying
- Salt and Pepper
Instructions
Braised pork
- Put the pork in a pot with bay leaves, peppercorns, broth, and pour water over to cover the meat.
- Let the meat simmer on low heat for 3 hours.
- Then let it cool in the pot.
- Take the meat out just before serving.
- Remove the bone if it is still attached.
- Heat a pan over high heat.
- Sear the meat on both sides until it has developed a good dark crust.
- Season with salt and pepper.
Peas with bacon
- Fry the bacon until crispy, drain most of the fat and add the peas.
- Fry for a minute.
Easy blanquette sauce
- Add butter to a pot and bring to a boil.
- Remove from the heat.
- Add egg yolks to the container of your stick blender, and mix in the crème fraîche, vinegar, salt and freshly ground pepper.
- Now gradually blend in the butter into your blanquette sauce, pouring the butter slowly in a thin stream while blending the sauce.
- Season the sauce to taste with salt, pepper, and a little lemon juice if needed.
Fried pointed cabbage
- Heat a pan over medium-high heat.
- Add butter and oil.
- Fry the 4 pieces of pointed cabbage on both sides.
- They should ideally be dark in color.
- Remove from the pan and sprinkle with parmesan, lemon juice, salt and pepper.
