
Recipe for baked oatmeal with pears, apples, and walnuts
Baked porridge – I love it! And now that autumn is knocking on the door, it’s truly the season again … Therefore, here is a real autumn edition; baked porridge with apples and pears – loads of flavor, aroma, crunch, and delight in this wonderful breakfast that is super quick to whip up! It requires some time in the oven, but that’s actually quite good because meanwhile, you can take a shower, go for a walk, handle some chores, or just relax with the kids – and the porridge takes care of itself in the meantime.
Baked porridge can be made with the fruit, grains, and spices you have in the pantry and tastes delightful served with a bit of yogurt, skyr, or the like – perhaps a splash of syrup for extra luxury. If you don’t eat it all for breakfast, it also tastes excellent with afternoon coffee – it’s both sweet and healthy and actually quite cake-like, but without being indulgent.
It’s also great to take on the go! Cut it into small slices, and you have a delicious, filling snack for the road.
This version is made with pears and apples – that’s what I had, and it’s spiced with cardamom, ginger, and a bit of vanilla – a truly delightful mix! But if you have peaches, bananas, or berries on hand, you can definitely use those instead and spice it how you like.

Baked oatmeal with pears, apples, and walnuts

Ingredients
- 1 pcs. Pear
- 1 pcs. Apple
- 60 gram Oatmeal
- 5 pcs. Dates
- 24 gram Coconut Flour
- 1 handful Walnuts chopped
- 12.5 gram Sugar
- 1 gram Cardamom
- 0.9 gram Ginger
- 4 gram Vanilla Sugar
- 2 pcs. Egg
- 150 gram Milk
Instructions
- Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit).
- Cut pears and apples into cubes and spread them at the bottom of an ovenproof dish – either greased or with baking paper. Save 1/2 pear for garnish.
- Mix the remaining ingredients together in a bowl and spread over the fruit in the dish, stir a bit.
- Slice the half pear into wedges and garnish with it and some chopped walnuts.
- Bake for 35 minutes in the oven.
- Serve with yogurt/skyr and possibly a bit of syrup.
