We often hear people talk about how small pieces of meat can be for dry aging.
Generally, it is said to be a minimum of 2 kg, and we have confirmed that here.
We tried Lidl’s award-winning marbled beef tenderloin (test winner in Politiken).
It is a bit too small for dry aging, but I tried anyway.
1.153 kg became 0.853 kg in 3 weeks in dry aging bags.
and after trimming, there was 0.623 kg left.
So 2 steaks of about 310 grams out of a tenderloin of 1.1 kg, it’s not worth the project.
