The DRY AGER® DX500 Maturing Cabinet

If you are into dry-aged meat, then you know that it is much more expensive than regular wet-aged meat, whether you’re dining at a steakhouse or shopping at your local butcher or a supermarket.

It tastes more intensely of meat and has a strong, nutty umami flavor. If it’s something you want to experiment with yourself, then a maturing cabinet might be the way forward for you.

If you’re a big food enthusiast and want to be involved in the entire aging process and love to showcase your meat (maturing cabinet) – then this is the way forward for you.

The cabinet is made by the German company Dry Ager, and their model DRY AGER® DX500 is unique compared to all other cabinets on the market – both in terms of price, design, and quality.

Isn’t there a catch, you wonder? Yes, indeed: The price – you really need to want this, as the price is +25,000 DKK, when you also need hooks, shelves, and possibly salt blocks.

Even though the price is high, believe it or not – the price is actually an argument for buying the cabinet. Not the price of the cabinet, but the fact that you can buy freshly slaughtered/fresh meat from your local butcher 10-30% cheaper than if you buy the ready-to-eat meat they have. This is because the butcher needs to hang the meat in his maturing/cooling room for 3-6 weeks before he can sell it. This ties up his liquidity, and therefore he is interested in selling the freshly slaughtered meat faster (and therefore cheaper).

Specifications:

It is made of stainless steel with the dimensions:

  • Internally: 71 x 50 x 43 (height x width x depth in cm).
  • Externally: 90 x 60 x 61 (height x width x depth in cm).

There is room for approximately 20 kg of meat, and it must be a maximum of 50 cm long.

The cabinet can be set to temperatures from 0-25 degrees Celsius with 0.1-degree accuracy.

No water connection is required for the cabinet, and there is a controller that manages the humidity. It ranges from 60-90%.

Hygiene is a very important factor when it comes to aging meat. The cabinet is cleaned, among other things, using a carbon filter, which is ventilated every minute with a UV filter.
