
Recipe for pommes rösti
The potato is quite an important part of Danish cooking, and it is hard to avoid when we talk about traditional Danish food.
But sometimes, it is just time for a little variation from the boiled white potatoes, and this is where Pommes Rösti is really delicious. They are known and loved by both children and adults, and they are a true hit if you want to try a slightly different potato side dish.

Pommes rösti is a delicious potato pancake that can be used as a side dish for many types of meat and vegetarian dishes. You can also eat them for breakfast, which is actually done in rösti’s homeland, Switzerland. A quick Google search quickly shows that people spell it rösti, rosti, and rösti, but the completely correct spelling is rösti 🙂
I have tasted many rösti in my life, and I often find that they are on the soft side. Personally, I prefer them to be crispy. My version is made with eggs, which definitely gives the best and crispiest rösti.

Pommes Rösti
Ingredients
- 500 gram Baked Potato
- 1 pcs. Onion
- 1 pcs. Egg
- Salt
- Pepper
- Olive Oil for frying
- Butter for frying
Instructions
- Potatoes and onions are coarsely grated on a grater.
- The grated potatoes and onions are pressed/squeezed free of moisture in a dishtowel. Change the cloth if it becomes too wet – it is essential to press as much moisture out of the potatoes as possible. This way, the potatoes become deliciously crispy instead of soft.
- Mix potatoes, onions, eggs, salt, and pepper well in a bowl.
- Form the mixture into small, flat patties. Use a mold if you want completely uniform and perfectly shaped rösti. I did so in this case.
- Heat a pan with plenty of butter and olive oil and fry your rösti over medium heat for 20-25 minutes on each side. They are then ready to serve.
