It is a flavorful and vegetarian stew based on red lentils.

Lentils have a high content of both protein and dietary fiber, making them very satiating.

In addition, lentils are also rich in vitamins and minerals, including B vitamins, potassium, phosphorus, iron, and zinc.

Ingredients

  • 3 pcs. Carrots Large
  • 2 pcs. Onion Large
  • 3 cloves Garlic
  • 2 pcs. Apples
  • 2.7 gram Chili Powder Sambal oelek
  • 6 gram Cumin
  • 1 gram Cilantro Dried
  • 1 can Chopped Tomatoes
  • 1 can Coconut Milk Preferably Light
  • 320 gram Lentils Red and dried
  • 200 gram Water
  • Salt To taste
  • Pepper To taste
  • 1.8 gram Ginger Ground or fresh (grated). Can be omitted
  • 13.6 gram Oil Neutral in flavor. For frying

Instructions

  • Chop the vegetables finely, e.g., in a mini chopper or grate them.
  • Heat oil in a large pot and sauté the vegetables and spices.
  • Add chopped tomatoes and coconut milk and reduce to medium heat.
  • Rinse the lentils and add them to the dish along with water, ensuring the liquid covers the lentils. Add more water during cooking if the lentils absorb all the liquid.
  • Let it all simmer for at least 20 minutes – this is important because lentils need to cook for at least 20 minutes before they can be eaten.
  • Stir the dish occasionally to prevent it from sticking to the pot.
  • Finally, season the dish with salt and pepper to taste.
  • Serve with cooked rice, whole grain couscous, a good piece of bread, or enjoy it as it is with a dollop of crème fraîche and a sprinkle of spring onions.

Notes

Tip: The dish can also be made with chicken breast cut into pieces. Add the chicken in step 2.
