
Recipe for chickpea salad with tomatoes, ham, and parmesan

This meal salad is great for both lunch and dinner; filled with roasted chickpeas, fresh tomatoes, bell pepper, sun-dried tomatoes, crispy Parma ham, and topped with Parmesan – just perfect!
Healthy and filling, easy to make, and brilliant for tomorrow’s lunch box if there are leftovers.
The salad tasted wonderful like this! But I also think it would be great with feta or mozzarella.

Chickpea Salad with Tomatoes, Ham, and Parmesan

- Frying Pan
- Cutting Board

Ingredients
- 1 can Chickpeas
- 27 gram Olive Oil
- 6 gram Salt freshly ground
- 1.5 gram Pepper
- 0.7 gram Basil ground
- 1 pinch Chili ground
- 100 gram Parma Ham
- 150 gram Cherry Tomatoes
- 50 gram Sundried tomatoes
- 2 handfuls salad mixed salad
Instructions
- Drain the chickpeas.
- Put oil and spices on a pan and heat it up well - add the drained chickpeas to the pan and fry for 5-6 minutes until they are lightly golden.
- Remove from the pan.
- Fry the ham crispy in the pan.
- Cut tomatoes and sun-dried tomatoes into cubes, toss them together with chickpeas and salad.
- Arrange on plates and top with ham and grated Parmesan.
