Oven baked cod with Asian twist

A delightful dish with cod and a wonderful Asian touch!
Asian Cod Recipe

Ingredients
- 500 gram Cod
- 25 gram Butter
- 8 gram Wheat Flour
- 100 gram Whole Milk
- 50 gram cheese grated Gruyere
- 1 Egg Yolk
- 15 gram Apple Cider Vinegar
- 200 gram Soup Thai soup
- 1 Lime in wedges
- 1 bunch Cilantro
- 100 gram Sugar Snap Peas
- 4 Scallion - Spring Onions
Instructions
- Season the cod with salt and pepper and place in an ovenproof dish.
- Melt butter in a saucepan and whisk in flour to make a roux.
- Add milk and cheese, and whisk until the cheese has melted and you have a cheese sauce.
- Whisk egg yolk with apple vinegar in a bowl to make an egg yolk mixture.
- Add 1 deciliter of the Thai soup to the cheese sauce and cool it down to lukewarm temperature.
- Whisk the cheese sauce together with the egg yolk mixture.
- Cut the spring onions into 1-centimeter slices and cut the sugar snap peas into smaller pieces.
- Pour the airy sauce over the cod and sprinkle with spring onions and sugar snap peas.
- Bake in the oven at 170 degrees Celsius (338 degrees Fahrenheit) for 8 - 10 minutes and let rest for 5 minutes.
- Sprinkle with fresh coriander and freshly squeezed lime.
- Heat 1 deciliter of Thai soup and use as extra sauce when serving.
Notes
TIPS: Optionally serve with pan-fried pointed cabbage, pointed cabbage salad, or noodles.
