Instructions
Season the cod with salt and pepper and place in an ovenproof dish.
Melt butter in a saucepan and whisk in flour to make a roux.
Add milk and cheese, and whisk until the cheese has melted and you have a cheese sauce.
Whisk egg yolk with apple vinegar in a bowl to make an egg yolk mixture.
Add 1 deciliter of the Thai soup to the cheese sauce and cool it down to lukewarm temperature.
Whisk the cheese sauce together with the egg yolk mixture.
Cut the spring onions into 1-centimeter slices and cut the sugar snap peas into smaller pieces.
Pour the airy sauce over the cod and sprinkle with spring onions and sugar snap peas.
Bake in the oven at 170 degrees Celsius (338 degrees Fahrenheit) for 8 - 10 minutes and let rest for 5 minutes.
Sprinkle with fresh coriander and freshly squeezed lime.
Heat 1 deciliter of Thai soup and use as extra sauce when serving.
