Grilled Ginger Cookies with Syrup

Equipment

  • Baking Tray or grill tray
  • Grill Grill temperature: 200°C

Ingredients

  • 150 gram Butter soft
  • 100 gram Brown sugar or muscovado sugar
  • 30 gram Honey
  • 200 gram Syrup
  • 400 gram Wheat Flour
  • 4.6 gram Baking Soda
  • 5.4 gram Ground ginger or 3 cm grated ginger for stronger flavor

Instructions

Kitchen

  • Whisk butter, brown sugar, and honey together for about 5 minutes until fluffy. Add syrup, flour, ginger, and bicarbonate of soda, and whisk until smooth. Wrap the dough in cling film and refrigerate for at least 30 minutes.
  • Roll out the dough with a rolling pin between 2 pieces of baking paper to about 5 mm thickness. Cut out using a cutter or a glass for small cookies.
  • Place them on a baking paper-lined baking tray.

Grill

  • Set and preheat the grill to 200°C (direct heat for gas grills, optionally with a baking stone).
  • Place the baking tray on the grill and grill until they are slightly golden at the edges for about 10-12 minutes.
  • Let them cool on a rack to become crispy.

Arrange

  • Optionally, decorate with chocolate icing, but they also taste great as they are with a cup of tea or coffee.
