Tournedos of beef is one of the most popular steaks, and I can easily understand why. Tournedos steaks are indeed incredibly tender and full of flavor.

Recipe for tournedos sous vide

Tournedos of beef is one of the most popular steaks out there, and I can certainly understand why. Tournedos steaks are incredibly tender and full of flavor.

It’s no secret that sous vide is my passion, so naturally, I had to try this method on tournedos. And may I just say: WOW!

What is tournedos?

Tournedos are steaks cut from the center of the tenderloin. The key factor is that they are cut to a thickness of 3 – 4 centimeters and the tenderloin is completely trimmed. Often, a kitchen string is tied around the steak to maintain its shape, but it’s also very popular to wrap either ham or bacon around it, as this also provides a truly delightful flavor to the steak. This time, I chose to use bacon.

Ingredients

  • 300 gram Beef Tenderloin 2 pcs. Tournedos about 150 grams each
  • Salt and Pepper
  • Butter or oil - for frying

Instructions

  • Season the steaks with salt and pepper.
  • Place the steaks in a vacuum bag, leaving a slight gap between them.
  • Seal the bag using a vacuum sealer.
  • Place the bag in the water bath and let your tournedos cook for 2 hours at 57 degrees Celsius (135 degrees Fahrenheit).
  • Thoroughly dry the steaks with a clean dish towel or paper towel.
  • Sear them at very high heat for 30 - 45 seconds on each side until they just develop a crust. Remember they are already fully cooked, so they should only lightly "kiss" the pan. I usually sear in ghee, but you can also use a mixture of butter and oil.
  • The steaks are ready to serve immediately.
  • Enjoy your meal!
