Quick-fried Tiger Prawns

Ingredients

  • 250 gram Tiger prawns Vannamei
  • Oil Taste-neutral. For frying
  • Salt
  • Pepper From mill

Instructions

  • Sometimes I buy my tiger prawns fresh or frozen.
  • However, I never buy them pre-cooked as I prefer to cook them myself.
  • If bought frozen, they go in the fridge in the morning if I plan to have them for dinner. I always place them in a bowl or with a dishcloth underneath.
  • 15-20 minutes before cooking, take them out of the fridge and peel them.
  • The shells go in a bag and into the freezer. They are used either for a bisque or to make a shellfish oil that you can use for a shellfish mayo.
  • The prawns are then well dried and left to dry on a towel until ready to be fried. It is important that they are not too cold/wet when they hit the pan as they will "boil" rather than fry.
  • Before frying, season them with salt and pepper.
  • The pan should be quite hot, but not smoking hot. On my induction hob, that means 11 out of 14.
  • Add oil to the pan and make sure it reaches the temperature before adding the prawns.
  • Add all the prawns at the same time and fry them for 1 minute.
  • Turn them all and give them 10-20 seconds on the other side.
  • The prawns are now ready to be served.
