White Bread from Öland Wheat
Homemade and airy white bread baked with Öland wheat. Do you know the issue where a loaf of bread either never rises or has large air holes inside? Use this method and you'll get a delicious loaf of bread that rises perfectly every time.
Ingredients
- 0.5 package Yeast Or 1 tbsp. Dry yeast
- 12.5 gram Sugar
- 18 gram Coarse salt
- 28 gram Oil
- 500 gram Water Lukewarm water
- 500 gram Øland Wheat Flour
Instructions
- Dissolve yeast, sugar, oil, and salt in the lukewarm water. Add flour gradually and knead the dough well.
- When the dough is smooth and light, without sticking to hands and the surface, let it rise for 30 minutes. Use a shower cap over the bowl, as it provides good rising conditions for the yeast (if you don't have a shower cap, use a towel or cling film instead).
- Punch the dough down on the surface, and flatten it out into a large rectangle with your fingers without creating holes in the dough.
- Fold the corner and left side of the dough towards the middle and press lightly on the seam.
- Roll the dough from top to bottom as tightly as possible, like a roulade.
- If you are unsure how to do this, you can see it explained here.
- Place the dough in your bread pan with the seam at the bottom (you can line your bread pan with parchment paper to ensure that the bread releases after baking). Let the bread rise again for 30 minutes under a towel while the oven preheats to 250 degrees Celsius (482 degrees Fahrenheit) (leave the baking tray in the oven while it heats up).
- Make a few cuts in the bread and dust it with a good layer of flour before placing it in the oven.
- Bake the bread first for 10 minutes at 250 degrees Celsius (482 degrees Fahrenheit) (which gives a crispy and delicious crust). Then lower the temperature to 200 degrees Celsius (392 degrees Fahrenheit) and bake for another 20 minutes.
- Take the bread out of the form immediately and remove the parchment paper.
- Let the bread cool before slicing it – if you can wait that long! The general rule is that it should cool for at least as long as it has baked.
