Recipe for flammkuchen – tarte flambée
When people think of pizza, they usually think of Italian food.
Flammkuchen – or tarte flambée – is the German cuisine’s answer to pizza! Flammkuchen was originally something bakers used to test the temperature of their ovens: They would roll out a small piece of dough, spread crème fraîche on top, and bake it for a few minutes. The time it took for the dough to turn crispy and “bubble” indicated the oven’s temperature and whether it was ready to be used for the “real” baking.
Today it is one of the most popular dishes from the Alsace region! It is a delicious, flavorful specialty topped with onions and lardo/bacon.
The recipe makes one large pizza, but I used it to make three small ones instead: one for the man of the house, one for the youngest daughter, and one for myself 😉
Flammkuchen – Tarte Flambeé Recipe

Ingredients
Pizza Dough
- 160 gram Tipo 00 Flour or wheat flour
- 110 gram Wheat Flour
- 9.6 gram Baking Soda
- 6 gram Salt
- 200 gram Water
- 30 gram Olive Oil
Sour cream
- 160 gram Sour Cream
- 1 Egg Yolk
- Nutmeg
- Salt and Pepper from the mill
Toppings
- 2 Red Onion
- 150 gram Bacon cubes
- Fresh thyme optional
Instructions
Pizza dough
- Start by placing your baking steel in the oven. Set the oven to 300 degrees Celsius (572 degrees Fahrenheit) and activate the grill function. Put tipo 00 flour, wheat flour, baking powder, and salt in a bowl and mix them together. I use my mixer. Put water and oil in a new bowl and mix them together. Gradually pour the oil/water mixture into the mixing bowl with the dry ingredients and let it blend well. Then knead the dough thoroughly. When the dough is smooth and pulls away from the sides of the bowl, sprinkle flour on the kitchen counter and turn the dough out onto it. Roll the dough out thin. Since I made three pizzas, I first divided the dough into three parts and then rolled them out separately. Place a piece of baking paper on the counter and place the dough on it. If you are baking multiple pizzas, each pizza should have its own piece of baking paper.
Crème Fraîche
- Put crème fraîche and egg yolk in a bowl along with grated nutmeg and freshly ground salt and pepper.
- Spread it over the pizza dough.
- Peel the onions and cut them into thin wedges.
- Put them on the pizza along with the bacon cubes. Of course, I used my husband's homemade, dry-cured bacon.
- Bake one pizza at a time for 7 - 8 minutes and serve.
