Recipe for potato leek soup with bacon
Creamy potato/leek soup with toasted, smoked bacon and chives is a light and delicious everyday dish that most people love.
The soup is quick to make, practically takes care of itself during preparation, and does not require many ingredients – we like that!
Feel free to serve the soup with a good bread on the side, or make these delicious rye bread croutons and add them to the soup. It tastes amazing!

Ingredients
- 1 kg Potato a floury variety (or use baking potatoes).
- 2 pcs. Leek
- 1.5 l Water
- 3 pcs. Stock Cube vegetable
- 150 gram Whipping Cream
- Spices salt and pepper
- 300 gram Bacon smoked
- 1 bunch Chives
Instructions
Soup:
- Peel the potatoes and cut them into cubes, and clean and slice the leeks.
- Put the vegetables in a pot and add water until they are covered.
- Bring the pot to a boil and add the bouillon cubes - ensure they dissolve completely.
- Boil everything for about 30 minutes, until the vegetables are tender.
- Blend the soup at the end - preferably with an immersion blender - and season with salt and pepper.
Garnish:
- Remove the rind from the bacon, and cut the rest into thin strips.
- Fry the bacon in a pan until it is crispy but not burnt.
- Drain the fried bacon on a piece of kitchen roll.
- Rinse and dry the chives and snip them over each portion of soup before serving.
- Enjoy!
